| This home-town gal makes a mean pumpkin roll! But, you're going to have to do something more than just sweet talk her to get a taste. She may look sweet on the outside, but rolled up inside is a fiesty one. The way to a man's heart is clear..... feed 'em and lead 'em, as the say. No roadmap to this one's heart..... you're going to have to be clever and find your own map. |  |
Sassy Sarah's Pumpkin Roll |
Pumpkin Roll
Roll:
3 eggs
2 tsp. cinnamon
1 cup sugar
1 tsp. ginger
2/3 cup pumpkin
1/2 tsp. nutmeg
1 tsp. lemon juice
1/2 tsp. salt
3/4 cup flour
Beat eggs and sugar well.
Add pumpkin and lemon juice. Blend.
In separate bowl, mix rest of ingredients.
Add egg and sugar mixture. Mix well.
Put in greased and waxed papered 10 x 15 inch jelly roll pan.
Bake at 375 degrees for 15 minutes.
Remove and cool 15 minutes.
Place on towel, cool 10 minutes.
Roll up, set aside.
Prepare filling.
Beat together:
1 (8 oz.) pkg. softened cream cheese
4 tblsp. butter
Stir in 1 cup powdered sugar
1/2 tsp. vanilla
Blend until smooth.
Spread filling over cake.
Roll up cake. Wrap up in waxed paper.
Cover and chill at least 1 hour. Keep refrigerated.
